Hi from London!

This week has just blown by. It's been a week of sightseeing through London, pretending I'm a local and meeting with old and new friends. It's been a great one. I'm sad to leave tomorrow but I'm also anxious to get back to Amsterdam again. We're meeting another friend in Amsterdam so I can't wait for the celebrations to continue. I just wish I had a few of these crispies to take with me on the plane. I'm missing these guys as they're, hands down the most used recipe in my home. I make this nearly once a week and keep these guys in the freezer for when I'm craving something a little sweet. They are a dream. I promise you will love them...

Serves: Many!

Prep Time: 15 minutes | Cook Time: 15 minutes

Ingredients for the Crispies:

- 2 & 1/2 cups puffed/popped quinoa (or popped brown rice)

- 3 tablespoons coconut oil

- 1/2 cup raw cacao powder

- 1/3 cup maple syrup 

- 1 tablespoon tahini (or any nut butter)

- 1 teaspoon cinnamon

- 1 teaspoon vanilla powder

- sea salt

Instructions:

Start by making the chocolate sauce. In a small pan over medium-low heat, melt the coconut oil, raw cacao, tahini, cinnamon, maple syrup, vanilla, and sea salt together until it becomes a thicker chocolatey mixture. Now pour the chocolate sauce over the popped quinoa and mix well. Scoop a large tablespoon of the chocolate crispies into small baking cups. Then pop them in the freezer for at least 20 minutes to harden. Store in the freezer and enjoy!
