Grilled Sourdough Avocado Toast with Tomatoes, Corn and Fresh Herbs

This recipe is for a spring grilled sourdough avocado toast made with fresh cherry tomatoes, corn, and fresh greens. It comes together in under 15 minutes for a delicious and satisfying meal! This recipe is naturally vegan and can easily be made gluten-tree. 

I honestly can’t remember a time when avocado toast didn’t exist! It’s the ‘meal’ that I turn to when I need a quick fix, or when I’m craving something satisfying and healthy, and also one that just looks so freaking pretty! But today, we don’t just have any avocado toast…we are making one that is topped to the nines with extra goodies just bursting with flavor! Starting off with grilled sourdough, layered with grilled avocado and corn, and topped with the sweetest yellow tomatoes!

Grilled Fruit and Tomato Sourdough Toast

Serves 2

2 slices of sourdough bread, grilled with a drizzle of olive oil 

1/4 cup corn 

1/2 avocado, grilled and then cut into thin slices

4 strawberries, cut in half and grilled 

1/2 cup Sunset®  Lolli BombsTM Tomatoes, halved 

Handful fresh watercress leaves 

Sprinkling of feta or vegan feta

Sprinkling of sea salt 

First add the grilled avocado slices onto the grilled sourdough toast. Then layer on the corn, grilled strawberries, Lolli BombsTM Tomatoes, sprinkling of feta, pinch of sea salt and watercress leaves. Enjoy!
