Blackberry-Mint Spritz
A refreshing Sparkling Prickly Pear Iced Tea with Muddled Blackberry-Mint. Can be served as is during they day and transformed into a delicious Spritz at night with a pop of Champagne! This recipe is natural gluten free and can easily be made vegan.
With summer on the horizon, I wanted to create a refreshing drink that could easily be transformed from daytime to night. With just a pop of champagne, we’re amping up our sparkling Blackberry-Mint Iced Tea into one hell of a Spritz!
There is so much I love about this drink - the beautiful pink-orange colors it takes on, the natural sweetness from the California Giant blackberries mixed with the honey and mint, and then topped off with sparkling water…perfection. And what I like to do is make a big batch of the flavorful blackberry prickly-pear iced tea, so that I can sip on it throughout the day and still have extra come night time - transforming it into a Spritz!
Whenever I have a Spritz I always feel as if I am being transported to the Italian Riviera without a care in the world. And I hope this drink gives off that same sentiment. It just looks so chic and is pretty effortless - especially as the additional whole California Giant blackberries tossed into the glass absorb all the delicious aromas from the Spritz! And I can’t tell you enough how insanely sweet these California Giant blackberries are! When I was creating this recipe I nearly ate half the container because I couldn’t get enough of their flavor! So juicy, so sweet, and ends up becoming the ideal flavor to balance out the more earthy notes within the tea.

Serves 2
1 cup Prickly Pear Iced Tea or hibiscus tea, chilled
1/2 cup sparkling water or champagne
Handful blackberries
Small dollop of honey
4 mint leaves per cup
Optional:
Passion fruit
Ice
In a large mason jar, mash the blackberries, mint and honey together with a splash of the tea. Muddling helps to infuse the flavors of each ingredient. Add in the rest of the tea and shake well to incorporate all the flavors. Strain out the mashed fruit and mint as you pour the tea into your two glasses. Top the drink off with sparkling water or champagne, extra blackberries, mint leaves and as an option - passion fruit and ice, and enjoy!
