If you’re looking for a seriously simple summer recipe, we’ll here is your sign! A completely plant-based summer curd recipe that is a riff on the classic! I adore that this recipe is made just by using simple pantry staple ingredients, and ones that are completely plant-based! Which means you get to indulge as much as you’d like! Traditional curd recipes call for egg yolks and loads of butter, but instead we’re keeping it healthy by adding in a secret ingredient… 

TOFU! Yes, tofu! I know how strange this might sound, but you have to stay with me on this one. Silken tofu is actually the perfect ingredient that offers up a creamy texture when blended, and best of all, it has no flavor! So it takes on the gorgeous sweetness of the raspberries and lemons! 

I am thrilled to partner with California Giant Berries on this innovative curd recipe! The plump, seasonal raspberries adds such a lovely sweet, yet tart flavor that pairs wonderful with the lemons. An elevated curd recipe at that! And what an easy way to add in a handful of antioxidants and vitamins into your day! And you can even use the fresh curd as a yogurt bowl topping, over breakfast toast, in smoothies or enjoy just on it own :)

Raspberry-Lemon Curd Dessert with Coconut Whip:

Serves: 2

3 tbsp coconut oil

3/4 cup organic silken tofu

3/4 cup California Giant Raspberries 

1/3 cup maple or honey 

Zest juice of 3-4 small lemons

2 tbsp arrowroot or cornstarch powder 

Top with:

Coconut whipped cream

Fresh fruit

Granola 

Add all the ingredients into a blender or food processor and blend until smooth. Pour into two small cups/bowls and let it set in the fridge for 2 hours. When ready to enjoy, top with coconut whipped cream, fruit and granola. 

Store the curd in an airtight container in the fridge.
