A Very Customizable Mixed Berry ‘Salad’ with Grilled Halloumi Cheese and Fresh Basil-Cilantro Vinaigrette! This is a flexible recipe with substitutions - it can easily be made vegan, gluten-free and dairy-free.

With everything going on in the world right now, I wanted to create a truly flexible recipe that that is rooted in nourishment from staple ingredients. And don’t worry about using the exact ingredients mentioned below, I’ll be providing loads of substitutions throughout, so I got ya covered!

I adore California Giant Berry Farms and am so happy to be working with them this year to show you interesting ways to use berries in recipes that you might not expect. Take this salad for example - there are virtually no greens to this ‘salad’ (unless you count the delicious vinaigrette!), and it is built around 3 main ingredients: sweet berries, hearty grains and salty halloumi cheese. These flavors all do a wonderful job at balancing out the other, creating a flavor sensation that you might not expect. It is divine, let me tell ya :)

I also love that we’re using a mix of berries especially as we’re all trying our best to stay very healthy - they’re loaded with essential minerals, vitamins and antioxidants. All in all, I hope you find comfort and happiness with this little recipe. Enjoy guys!

Mixed-Berry-Salad-Grain-Bowl-vegan

Serves 2-3

Ingredients:

2 cups farro, cooked

Large handful pistachios, toasted

1/4 cup @calgiantberries blueberries

1/4 cup @calgiantberries blackberries

1/4 cup @calgiantberries raspberries

8 ounces halloumi cheese, cut into 1/3 in” thick slices and warmed on the grill or pan for 2 minutes per side on medium heat. Then cut into cubes. 

For the Dressing:

1/2 cup fresh cilantro leaves, finely chopped

1/4 cup fresh basil leaves, finely chopped

1/4 cup olive, avocado or walnut oil

1 tablespoons white vinegar or rice wine vinegar

1 small clove garlic

1 tsp maple or honey

generous pinch of sea salt 

splashes of water to thin out the dressing

Ingredients:

Toss all the salad ingredients together in a bowl. Now add all the vinaigrette ingredients into a jar and shake well. Pour over the salad and enjoy!
